Blueberries & Honey Muffins
As many of you know I love good food. Cooking is something I truly enjoy and a big part of my life
It’s Sunday morning so its a good time to share with you my favorite muffin recipe: Blueberries and Honey.
With honey and molasse as main sweeteners, spelt flour and loads of blueberries its also a healthy snack.

Blueberries & Honey Muffins
Servings 12
Ingredients
- ¾ cup all-purpose flour
- ¾ cup spelt flour
- ½ tsp baking powder
- ¾ tsp baking soda
- ½ tsp salt
- ½ cup butter
- ½ cup sugar
- 2 tbsp molasse
- 3 tbsp honey
- 2 eggs
- 1 tsp vanilla extract
- ¼ cup buttermilk
- 1 cup fresh of frozen blueberries (do not thaw)
Instructions
- Preheat oven to 425 degrees
- Mixed together all the dry ingredients.
- In another bowl beat butter, sugar, honey and molasse. Add the eggs one at a time beating after each addition. Add vanilla.
- Add the dry ingredients and buttermilk in two additions alternating.
- Incorporate the blueberries without mixing too much.
- Bake for 20-25 minutes, lowering the oven temperature to 325 degrees when putting the muffins in the oven.
