Estonian Blossom & Key Lime Pie

Rahymah Handworks released an amazing new shawl pattern this past week.

This crescent shaped shawl is worked with Estonian stitch pattern elements and beads. The pattern is fully charted and has written instructions.

Elegant and fun, a true beauty to please lace knitting lovers.

I admire Rahymah’s work for her impeccable lines, attention to details and harmony.

You will be able to complete this project with one skein of Merletto.

In this post i’m also including the recipe for my Key Lime Pie; totally not related but still  with last week muffin recipe I got a lot of request for this one so here it is!

Talk about lime (or lemon, or orange!) and I am in. I LOVE them! This one is easy, quick and fresh, its one of my go to dessert. Enjoy!

Key Lime Pie

Course Dessert

Ingredients

  • cup Graham Cracker Crumbs
  • ¼ cup Unsalted Butter Melted
  • 2 tbsp Sugar
  • 5 egg yolks
  • 1 can Can Sweetened Condensed Milk
  • ½ cup Lime Juice
  • Zest of one Lime
  • 1 cup Heavy Cream
  • 1 tbsp Icing Sugar
  • Vanilla extract

Instructions

  • Combine Graham crumbs,butter and sugar together. Press unto the bottom of a 9 inch pie plate. Bake for 10 minutes at 350 F.
  • While the crust is in the oven;Beat egg yolks until pale.
  • Beating at medium speed,add sweetened condensed milk along with half the lime juice. Dont mix too much.
  • Incorporate remaining lime juice and the lime zest.
  • Pour over crust and bake for another 13 minutes.
  • Let it cool.
  • Whip cream with icing sugar and vanilla. Spread on top of pie.
  • Let chill for at least 2 hours.
  • ENJOY!!!!
