Blueberries & Honey Muffins

Ingredients

  • ¾ cup all-purpose flour
  • ¾ cup spelt flour
  • ½ tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • ½ cup butter
  • ½ cup sugar
  • 2 tbsp molasse
  • 3 tbsp honey
  • 2 eggs
  • 1 tsp vanilla extract
  • ¼ cup buttermilk
  • 1 cup fresh of frozen blueberries (do not thaw)

Instructions

  • Preheat oven to 425 degrees
  • Mixed together all the dry ingredients.
  • In another bowl beat butter, sugar, honey and molasse. Add the eggs one at a time beating after each addition. Add vanilla.
  • Add the dry ingredients and buttermilk in two additions alternating.
  • Incorporate the blueberries without mixing too much.
  • Bake for 20-25 minutes, lowering the oven temperature to 325 degrees when putting the muffins in the oven.
